Bacon, Cheddar and Potato Frittata Muffins
Ingredients
8 ounce Chopped Hardwood Smoked Uncooked Premium Bacon
10 large eggs
2 cup frozen hash brown potatoes, shredded
1 cup cheddar cheese, shredded
¼ cup heavy cream
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon pepper

Directions
- Preheat oven to 350°F.
- Add chopped bacon to a medium, pre-heated skillet. As bacon heats, stir occasionally to break apart pieces until crispy, 4-6 minutes. Remove cooked bacon and drain on a paper towel.
- While bacon is cooking, whisk eggs, heavy cream, garlic powder, salt, and pepper together until well incorporated.
- Fold in bacon, hash brown potatoes, and cheddar cheese.
- Divide egg mixture evenly among well-greased muffin tin.
- Bake for 20-25 minutes or until egg is set.
